Sweet Potato & Herb Ricotta Spinach Bites

Ingredients:

  • 1 bag Papa Mountain Sweet Potato & Herb rolls
  • ricotta cheese
  • baby spinach or arugula
  • olive oil
  • pinch of salt
  • black pepper

Optional Garnish:

  • Chili flakes or a drizzle of honey

Instructions:

Step 1: Heat
Warm the Sweet Potato & Herb rolls at 425°F until hot and crisp outside. Internal packaging says they are fully baked and best served warm, with oven heating from frozen at 7–9 minutes or refrigerated at 5–7 minutes


Step 2: Prep the filling
In a small bowl, mix ricotta with a pinch of salt and black pepper.


Step 3: Add greens

Toss the spinach or arugula with a tiny drizzle of olive oil.


Step 4: Assemble

Slice each warm roll in half. Add a spoon of ricotta and a few leaves of spinach.

Step 5: Finish
Add chili flakes for contrast or a light drizzle of honey if you want to play up the sweet potato note.
